Huevos Rancheros

Breakfast is hands down my favorite meal. It's extremely important and really gets your day going. Forget lunch or dinner, if I have free day off, I am usually at my favorite diner for breakfast or brunch spot before I hit the studio!

To celebrate my favorite way to start the day, I wanted to begin a new series of breakfast/brunch meals and my favorite recipes. So first out of the gate is Huevos Rancheros, it's quick, easy, and most of the time I usually have all the ingredients on hand. An added bonus is that it's really a great meal to share with friends. Like tacos, everyone can assemble them as they please. There are no rules, just yummy enjoyment!

The Run Down - Huevos Rancheros (Serves 4)


  • 2 Cups Salsa
  • 2 Limes, cut
  • 2 Cloves Garlic chopped or grated
  • 1/2 Pound Chorizo out of casing 
  • 1/2 Teaspoon Cumin
  • 1/2 Teaspoon Paprika
  • 1/2 Teaspoon Chili Powder
  • Salt and Pepper
  • 1 Tablespoon Butter
  • 1 15 oz. can Black Beans
  • 1/4 onion chopped
  • 4 Tostadas
  • 1 Avocado
  • 4 Eggs
  • 4 Tablespoon Cheddar
  • Hot Sauce

Rancheros Sauce
Add 1/2 tablespoon of butter into a small pot on med-low and melt. Once your butter has melted add in the grated garlic and cook until aromatic about 30 sec. Pour in the salsa of your choice with one lime juiced. Season with salt and pepper and leave to simmer until thickened.

Chorizo and Beans
In a medium pan on medium, break up your chorizo and cook until browned, about 10 minutes. remove onto a plate with paper towels to drain. Using the remaining chorizo fat plus a 1/2 tablespoon of butter add 1/4 of a chopped onion and saute until translucent about 5-7 minutes. Add the spice mixture and stir to incorporate with the onions, once combined, add the black beans and mash with a fork until you get a chunky texture. Salt and Pepper to taste.

Fry the egg to your liking, I like mine sunny side up!

To assemble
Put the bean mix on top of your tostada and spread. Then add a good amount of your chorizo, cheese, ranchero sauce, and egg. Garnish with the hot sauce and lime. I also like mine with a side of sliced avocado and there you go - delicious Huevos Rancheros!
